Gastronomy and recipes: among the best gastronomical specialties of our region are outstanding first course dishes such as maccheroni alla chitarra (square-shaped tagliatelle) that are boiled and served with ragu (meat sauce) or tomato sauce. Other specialties are Cardoon Thistle soup, lamb and/or kid meat, cheese and eggs, and le zolle (red garlic flower scapes [stalks]). And finally for those who are really hungry there is La Panarda, a deliciously demanding gigantic dinner with more than 30 courses! Typical products: Truffles, Saffron, Red Garlic, Mosto cotto (cooked grapeuice), Ratafia (sweet liqueurs made from wine and brandy), Montepulciano wine, and Sugar-coated Almonds.
